Chicken Wild Rice Soup Recipe

1 Cup Diced Onion
1 Cup Diced Celery
2 Cups Diced Carrots
1 tsp Dry Thyme
7 Cups Chicken Stock
3/4 Cup Wild Rice
3 Cups Shredded Cooked Chicken
Salt to taste
Pepper to taste
1 tsp Poultry Seasoning
 Roux Ingredients:
4 TBSP Butter
6 TBSP Flour
2 Cups Half and Half
Dice onion, Celery, Carrot’s and set aside. In large soup pan set on medium high heat and add Onions, Celery, Carrots, Thyme, Chicken Stock and Wild Rice and cook approx 20 minutes stirring occasionally. Shred cooked Chicken and set aside. Make Roux – In separate sauce pan on medium heat add Butter and Flour,  whisking for approx 2 minutes to well combine. Next add Half and Half and whip continually with whisk to well combine.  Add Roux to soup and mix well. Next add Chicken to soup and mix. Add Salt and Pepper to taste along with 1 tsp Poultry Seasoning. Stir well and cook for approx 30 minutes. Enjoy!
