Cheesy Bacon Veggie Casserole Recipe

1 Large head of Cauliflower
3-4 Heads of Broccoli
1lb Bacon
1/2 Cup Sour Cream
1/2 Cup Mayonnaise
1 Tbsp Heavy Cream
1 Tbsp Salt Free McCormick Garlic and Herb Seasoning
1/2 tsp Salt
1/4 tsp White Pepper
2 Cup Colby Jack Cheese
1 Cup Vermont White Cheddar Cheese
1/2 Cup Scallions

Preheat oven to 350 degrees. Spray 2 quart backing dish and set aside.  Roughly chop Cauliflower and Broccoli and place in a large bowl and set aside. Fry Bacon and place on layers of paper towels. When cool crumble and set aside. In medium bowl add Sour Cream, Mayonnaise, Heavy Cream, McCormick seasoning, Salt and Pepper whisk to combine.  In the large bowl of Cauliflower and Broccoli add 1/2 of the Colby Jack Cheese, Vermont White Cheddar Cheese, Scallions and 1/2 to 3/4 of the crumbled Bacon. Next add Sour Cream mixture and stir well to combine. Pour ingredients in backing dish and top with remaining Colby Jack Cheese and Bacon. Spray one side of a sheet of foil, cover and bake for 30 minutes or until veggies are fork tender or until desired tenderness. Enjoy.
