Creamy Garlic and Corn Mashed Potato



6 Medium to large Yellow Potatoes
1 Tbsp Salt, for boiling Potatoes
8 Tbsp Butter
1 Small or 1/2 medium Sweet Onion, roughly chopped
2 Large Cloves of Garlic, roughly chopped
1 10oz bag of Sweet Frozen Corn, Thawed
1 1/2 Cups of Heavy Cream
Salt and Pepper to taste
Peal Potatoes, dice into large pieces and rinse with cool water. Place in large pot and cover with water.  Add salt and boil until fork tender. Drain and set aside. Roughly chop Onion and Garlic. Set large deep skillet to medium high heat and add butter and melt. After Butter is melted add Onions and saute until slightly translucent. Next add Garlic and saute an additional minute. Reduce heat to medium and add Corn and cook for 3 to 5 minutes. Add Salt and Pepper to taste. Add Heavy Cream and stir until well combined. In medium bowl add drained Potatoes and mash. Add Corn mixture to Potatoes and still well. Best served right away.  Enjoy
