Cheesy Bacon and Potato Soup

Time saving Cheesy Bacon and Potato Soup Recipe Ingredients:

1 32 – 48 oz of Chicken broth (depending on thickness)
1 10.5 oz can of Cream of Chicken Soup
1 8 oz Block of Cream Cheese
1 Chicken Bouillon Cube
1 32 oz bag of frozen diced hash browns
4 Cups of Shredded Cheddar Cheese
      (3 Cups in the soup & 1 cup for topping before eating)
 1 – 9 oz bottle of Bacon Bits
      (Add ½ Cup real Bacon Bits in soup and ½ Cup for topping before eating)
Salt and Pepper to taste.
Cook on high for 3 ½ hours or until potatoes are tender.

Time saving Cheesy Bacon and Potato Soup directions:

Set crock pot on high and add chicken broth.
Add 1- 10.5oz can of Cream of Chicken Soup to broth and mix well
Cube 1- 8oz block of Cream Cheese and add to crock pot and mix well
Add 1 Chicken Bouillon Cube to crock pot
Next pour in 1-32oz bag of frozen diced Hash Browns
Add 3 cups of shredded Cheddar Cheese
Add 1/2 cup of real bacon bits to soup mix well
Cook soup on high for approx 3 1/2 hours or until potatoes are tender.
Add Salt & Pepper to taste
When soup is finished top with more shredded Cheddar Cheese and real Bacon Bits.
Enjoy.

Longer Version Cheesy Bacon and Potato Soup Recipe Ingredients:

8 Cups of Diced Potatoes
2 Cups of Shredded Cheddar Cheese 
2 Cups White Cheddar Cheese
     (3 Cups in the soup & 1 cup for topping before eating)
1 LB of Bacon crumbled
     (Add ½ Cup Bacon to soup and ½ Cup for topping before eating)
Salt and Pepper to taste.

Longer Version Cheesy Bacon and Potato Soup Directions:

Set crock pot on high and add chicken broth.
Add 1- 10.5oz can of Cream of Chicken Soup to broth and mix well
Cube 1- 8oz block of Cream Cheese and add to crock pot and mix well
Add 1 Chicken Bouillon Cube to crock pot
Next pour Potatoes and stir
Add 3 cups of shredded Cheese
Add 1/2 cup of crumbled Bacon and mix well
Cook soup on high for approx 4 1/2 hours or until potatoes are tender.
Add Salt & Pepper to taste
When soup is finished top with more shredded Cheddar Cheese and real Bacon Bits.
Enjoy.

  • My family really enjoyed this soup…Easy to make.We left out the bacon..No chopping just throw it all in..you can add whatever you want to it..But if you just want a good cheesy potatoe soup this is it.

  • I made this soup for my boyfriend and I last week. I didn’t change a thing, and it turned out perfectly! It was very cheesy and bacon-y. A very thick soup as well. I will definitely be making this again, but possibly in a smaller amount next time, as it was way too much for only 2 of us to eat.

  • Fantastic soup. Made it 2 days ago and everyone loved it. I really think it was even better the 2nd day. BTW, I crumbled real bacon and also added bulk sausage to recipe for husband who loves meat. Will be making it Christmas Eve

  • I have tried several different recipes, and this is by far the easiest and the best!!!! I did add onions to the recipe. Made once for my husband and our friends, then for my aunt, uncle and cousin and they love it! Cant wait for the rest of the family to try it on Christmas! My husband keeps asking me when I'm making it for him again lol!

  • There are many ways to make this with various ingredients… It started out years ago using hotdogs for the meat well over 30 years ago Ham works great Adding Cream of Mushroom soup Sliced Mushrooms…. Many ways to make a good thick rich Soup…

  • Sounds good, but these frozen diced potatoes are made from real potatoes. They are just for saving time. 🙂

  • Hope it turned out awesome. The bacon bits we use are made from real bacon. We used these little quick ideas during this video to show a quick and easy way to make this soup without lacking the taste.

  • Id say it would last a couple months frozen. After that it would probably loose it's flavor getting frost bitten.

  • There are already 2 questions asking how many servings this soup makes and neither have been answered. So please, how many servings does this make?

    • We made this recipe in our pressure cooker also and it made approx 6 qts. So depending on how big of eaters you have will determine how many it will feed. Hope this helps.

  • Will this fit in a 3 Quart size crockpot?

    • No, we made it in a 6 quart pressure cooker and it filled up. You could just cut everything in half and should work for you.
