Place a cooling rack on a cookie sheet and spray well with cooking spray. Quarter the Zucchini, place in a large bowl and toss in EVOO. Add all seasoning to a small bowl and mix well. Reserve 1/4 cup of the seasoning and set aside. Add the rest of the seasoning to the bowl with Zucchini and toss well. Place Zucchini on cooling rack and top with reserved seasoning. Back for 20 to 25 minutes or until tender. Move to top rack and broil for 4-5 minutes or until golden brown. Service with your favorite Marinara Sauce.</span></span><b><span style="font-size: large;"><br /></span></b></i></div>
